The core reason for the success of Paloma Blanca Mexican Cuisine isn’t our cuisine or atmosphere – it’s our family of good people.  Many of us have been with the company since its inception, and yes, many of us are actually related to one another! 

Each of us takes pride in providing each guest with an exceptional experience by endeavoring to live up to the sign you’ll find in the back of the house:  Paloma Blanca practices the Golden Rule.  We will always work to treat our guests as we would want to be treated...

Nelly Mendoza Olsen's history with the restaurant is a great success story. Born and raised in Veracruz, Mexico, she joined Paloma Blanca Mexican Cuisine in 1998 as a hostess. Her management ability, work ethic, enthusiasm, and desire to keep improving Paloma Blanca's operations was evident early on. As a result, she continued to advance from position to position, and was finally promoted to Vice President and General Manager of Paloma Blanca in the Fall of 2003. She now presides over an operation that employs more than 75 employees and serves in excess of 3,500 meals a week. Additionally, Nelly was integral in co-creating Vela at Paloma Blanca, Paloma's second bar and third private room located across the patio.

Richard Peacock is President and majority owner of WJP Partnership, Ltd., the owner of Paloma Blanca Mexican Cuisine, having been one of the original partners that opened the restaurant in 1997.

While he ultimately is responsible for overall restaurant operations, Richard's other focus is in the commercial real estate industry as a broker and developer/investor. He works with his father at Richard M. Peacock & Co., a commercial real estate brokerage firm started in 1950 by his grandfather Joe A. Peacock that has historically specialized in the brokerage of income properties. He is currently on the board of the Texas Cavaliers Charitable Foundation, and has recently served on the board of the Alamo Heights School Foundation and as past Chairman of the Terrell Hills Planning and Zoning Commission. Richard and his wife Brooke are both active in their church, he as past director of an adult Bible study class, then Youth Director, and now as a leader of their new church plant. They have identical twin boys born in 2006.

Richard graduated from MacArthur High School in 1984, and earned a Bachelors of Business Administration degree, while majoring in Real Estate and Urban Land Economics, from Southern Methodist University in 1988.
